Squash Smorgasbord: Starring Spaghetti Squash: The Entree

Spaghetti squash is the platypus of the vegetable world.  I say that because the spaghetti squash it is so unique.  Who would have thought you could scoop out spaghetti from a squash?  The following is one vegetarian recipe choice when cooking spaghetti squash. Another serving option is to cook the squash as indicated in the recipe below and toss the spaghetti squash with your favourite tomato sauce or meatball sauce.
Spaghetti Squash – An Alternative To Pasta
Serves 6

1 medium spaghetti squash
1/2 cup grated Parmesan cheese
1/2 stick butter
Salt and pepper

Preheat the oven to 350 degrees F. Use a paring knife to prick squash all over. Place in a baking dish and bake 1 hour or until soft. Cut squash in half. Scoop out and discard seeds. Using a fork, scrape flesh in strings into a serving bowl. Toss with Parmesan and butter and season to taste with salt and pepper.
